Later ventures, including the revered Sadie Katz Deli, reinforced his lifelong belief that good taste should never be out of reach.
After decades in the industry, Glenn discovered an untapped opportunity in rectification: sourcing excess bulk spirits of the same caliber used by national brands, refining them through careful proofing and carbon filtration, and bottling them under his own label.
With Bar Owner's Choice, Glenn has brought his career full circle — offering clean, consistent, premium spirits that deliver both quality and value, staying true to the principles that have guided him all along.
Meet Glenn
Bar Owner's Choice was founded by longtime bar owner and brewer Glenn Walter with one goal in mind: deliver premium-quality spirits at a price that works for both bar owners and their guests.
Originally from New Jersey, Glenn began his professional life in real estate but left in protest of unfair practices — a decision that set the tone for a career built on integrity.
Relocating to Vermont, he traded a desk for kitchens and ski slopes, quickly rising from chain restaurants to fine French dining before realizing his true calling was bigger than the back of house.
Mentored by Greg Noonan at Vermont Pub & Brewery, Glenn became his first and only protégé and is credited with helping create the Black IPA style. He went on to open Three Needs, one of Vermont’s first craft-only bars and a medal-winning brewery, where he set a standard of always serving well spirits that delivered true value without sacrificing quality.
